Do a Saturday or Sunday tourney, starting at like 2est. Have everyone who can play matches throughout the day show up, have captains selected, let them draft their team, and then start doing the matches. Those who show up should know whether they can commit to the majority of the day or not. Have a match scheduled each hour, and have a "lunch break" scheduled for an hour sometime between the upper bracket matches.
Any player who decides to create an "excuse" of why they can't continue to play when they don't like their team or feel they don't have a winning chance can be considered ineligible for the next draft tourney.

You should definetely have all the matchs played on a sunday/saturday. Instead of spread out over a couple of weeks.
